1. Dark Chocolate Espresso Cake

Ingredients:

  • ¼ cup, cold brew coffee
  • ¼ cup, quick oats
  • ¼ cup, dark cocoa powder
  • 2–3 tablespoons, sweetener
  • ½ teaspoon, baking powder
  • A pinch of salt
  • 3 tablespoons, oil
  • 1 egg
  • ½ teaspoon, vanilla extract

Instructions:

Instructions:

  1. For this easy coffee cake recipe, start by placing the instant espresso, cocoa powder, sugar, flour, salt, and baking powder in a large coffee mug.
  2. After stirring, add the vegetable oil, milk, and vanilla and stir some more.

For the easy coffee cake:

  • ½ cup, butter
  • 3/4 cup, granulated sugar
  • 2 large eggs
  • 1 cup, sour cream 
  • 2 teaspoons, vanilla extract
  • ½ teaspoon, salt
  • 1 teaspoon, baking soda
  • 1 teaspoon, baking powder
  • 2 cups, all-purpose flour

For topping:

  • 1/3 cup, sugar
  • 1 ½ teaspoons, ground cinnamon
  • 1 tablespoon, espresso powder
  • 6 ounces, miniature chocolate chips

Instructions:

  1. Preheat the oven to 350 F/180 C. 
  2. Grease a 10-inch pan and put it aside.
  3. Place the butter and sugar in a large bowl and beat them.
  4. Add and beat the eggs, one by one.  
  5. Add the vanilla and sour cream, followed by baking soda, salt, baking powder, and flour.  
  6. In a separate bowl, combine the espresso powder, sugar, and cinnamon for the topping. 
  7. Pour half of the batter into the pan. 
  8. Sprinkle half of the topping and half of the chocolate chips over the batter. Then, pour the other half of the batter over the top and sprinkle it with the rest of the topping and chocolate chips.
  9. Bake for 45-50 minutes.

5. Espresso Lava Coffee Cake

Ingredients:

  • 1 tablespoon, espresso

  • 2 tablespoons, unsweetened cocoa powder
  • ⅛ teaspoon, baking soda
  • ⅛ teaspoon, salt
  • 3 tablespoons, milk
  • 2 tablespoons, vegetable oil
  • ¼ teaspoon, vanilla
  • 1 tablespoon, mini-chocolate chips
  • sprinkle of optional powdered sugar 

Instructions:

  1. Place the sugar, flour, baking soda, cocoa, and salt in a large coffee mug and stir.
  2. Add the milk, oil, espresso, and vanilla. Keep stirring.
  3. Place the mini-chocolate chips in the center of the mug.
  4. Microwave using 50% power for 40 seconds. 
  5. Remove the mug from the microwave and use a toothpick to stir the center before microwaving it at 50% power for another 60-80 seconds.
