Here are seven easy coffee cake recipes that can be made with the help of the EspressoWorks 7-Piece Machine and its state-of-the-art bean grinder.

 

1. Dark Chocolate Espresso Cake

Preparation/baking time: 7 minutes

Servings: 2

Ingredients:

  • ¼ cup, cold brew coffee
  • ¼ cup, quick oats
  • ¼ cup, dark cocoa powder
  • 2–3 tablespoons, sweetener
  • ½ teaspoon, baking powder
  • A pinch of salt
  • 3 tablespoons, oil
  • 1 egg
  • ½ teaspoon, vanilla extract
  • 2 teaspoons, dark chocolate chips

Instructions:

  1. Place the cocoa powder, oats, baking powder, sweetener, and salt in a small bowl. 
  2. Combine the coffee, egg, oil, vanilla extract, and chocolate chips in a separate bowl.
  3. Coat a large coffee mug with cooking spray. 
  4. Pour the batter into the mug, and microwave this easy coffee cake recipe for one minute and a half. Serve.

     

    2. Cappuccino Coffee Cake

    Preparation/baking time: 12 minutes

    Servings: 1

    Ingredients:

    • 30 grams, butter 
    • ½ teaspoon, cocoa powder• 3 tablespoons, sugar
    • 1 egg 
    • 2 tablespoons, milk
    • 1 teaspoon, ground espresso
    • 4 tablespoons, flour
    • 1 pinch of instant baking powder  

    Instructions:

    1. Melt the butter and mix it with sugar in a bowl. Add the egg after beating it, followed by the milk and coffee.
    2. Pour this mixture into a coffee mug.
    3. Microwave for 90-120 seconds.

    3. Mocha Coffee Cake

    Prep/Bake Time: 10 minutes

    Servings: 1

    Ingredients:

    • 1 tablespoon, ground espresso 
    • 3 tablespoons, all-purpose flour 
    • 3 tablespoons, sugar
    • 2 tablespoons, unsweetened cocoa powder 
    • ¼ teaspoon, baking powder 
    • ¼ teaspoon, salt 
    • 3 tablespoons, milk
    • 3 tablespoons, vegetable oil
    • ¼ teaspoon, vanilla extract
    • 3 tablespoons, chocolate chips 
    • Whipped cream and chopped chocolate-covered espresso beans for topping 

    Instructions:

    1. For this easy coffee cake recipe, start by placing the instant espresso, cocoa powder, sugar, flour, salt, and baking powder in a large coffee mug.
    2. After stirring, add the vegetable oil, milk, and vanilla and stir some more. 
    3. Add the chocolate chips.
    4. Microwave for 1 minute and 15-30 seconds.
    5. After letting the easy coffee cake recipe cool for 2 or 3 minutes top it with whipped cream and espresso beans.

     

    4. Espresso Chocolate Coffee Cake

    Preparation/baking time: 4 minutes

    Servings: 12

    For the easy coffee cake:

    • ½ cup, butter
    • 3/4 cup, granulated sugar
    • 2 large eggs
    • 1 cup, sour cream 
    • 2 teaspoons, vanilla extract
    • ½ teaspoon, salt
    • 1 teaspoon, baking soda
    • 1 teaspoon, baking powder
    • 2 cups, all-purpose flour

    For topping:

    • 1/3 cup, sugar
    • 1 ½ teaspoons, ground cinnamon
    • 1 tablespoon, espresso powder
    • 6 ounces, miniature chocolate chips

    Instructions:

    1. Preheat the oven to 350 F/180 C. 
    2. Grease a 10-inch pan and put it aside.
    3. Place the butter and sugar in a large bowl and beat them.
    4. Add and beat the eggs, one by one.  
    5. Add the vanilla and sour cream, followed by baking soda, salt, baking powder, and flour.  
    6. In a separate bowl, combine the espresso powder, sugar, and cinnamon for the topping. 
    7. Pour half of the batter into the pan. 
    8. Sprinkle half of the topping and half of the chocolate chips over the batter. Then, pour the other half of the batter over the top and sprinkle it with the rest of the topping and chocolate chips.
    9. Bake for 45-50 minutes. 
    10. Let this easy coffee cake recipe cool for 20 minutes before moving it to a rack and letting it cool some more. 

     

    5. Espresso Lava Coffee Cake

    Preparation/baking time: 5 minutes

    Servings: 1

    Ingredients:

    • 1 tablespoon, espresso 
    • ¼ cup, all-purpose flour
    • ¼ cup, sugar
    • 2 tablespoons, unsweetened cocoa powder
    • ⅛ teaspoon, baking soda
    • ⅛ teaspoon, salt
    • 3 tablespoons, milk
    • 2 tablespoons, vegetable oil
    • ¼ teaspoon, vanilla
    • 1 tablespoon, mini-chocolate chips
    • sprinkle of optional powdered sugar 

    Instructions:

    1. Place the sugar, flour, baking soda, cocoa, and salt in a large coffee mug and stir.
    2. Add the milk, oil, espresso, and vanilla. Keep stirring.
    3. Place the mini-chocolate chips in the center of the mug.
    4. Microwave using 50% power for 40 seconds. 
    5. Remove the mug from the microwave and use a toothpick to stir the center before microwaving it at 50% power for another 60-80 seconds.
    6. Let the mug cool for 2 minutes. Sprinkle with powdered sugar, if desired, and serve this easy coffee cake recipe.

     

    6. Chocolate Espresso Coffee Mug Cake

    Preparation/baking time: 2 minutes

    Servings: 1

    Ingredients:

    • 1 tablespoon, ground espresso 
    • ¼ cup, all-purpose flour
    • 2 tablespoons, unsweetened cocoa powder
    • ¼ teaspoon, baking powder
    • 2 tablespoons, granulated sugar 
    • ⅛ teaspoon, salt
    • ¼ cup + 1 tablespoon, milk
    • 2 tablespoons, vegetable oil
    • 1 tablespoon, mini-chocolate chips

    Instructions:

    1. Mix the dry ingredients in a medium-sized bowl. 
    2. Add the milk and oil. Stir.
    3. Pour the batter into a large mug and add the mini-chocolate chips.
    4. Microwave at a high temperature for 70 minutes. Serve.

     

    7. Easy Coffee Cake in a Mug

    Preparation/baking time: 6 minutes

    Servings: 1

    Ingredients:

    • 1 tablespoon, granulated sugar
    • 2 ½ tablespoons, all-purpose flour
    • 1/8 teaspoon, salt
    • ¼ teaspoon, baking powder
    • 1 tablespoon, vegetable oil 
    • 1 tablespoon, nonfat milk or almond milk
    • A dash of vanilla
    • ½ tablespoon, brown sugar
    • ¼ teaspoon, ground cinnamon

    Instructions:

    1. Spray a large coffee mug with nonstick spray before adding the sugar, salt, flour, baking powder, vanilla, milk, and oil.
    2. Sprinkle brown sugar and cinnamon on top.
