4 Coffee-based Recipes Your Mom will Adore!

We’ve curated a list of four easy-to-make recipes that you can try yourself at home for the perfect Mother’s Day gift. We would recommend giving these a few practice runs so that you can perfect each recipe to your mom’s liking. The great thing is, even while experimenting, you’ll be able to treat yourself to awesome desserts and great coffee. Once you’ve perfected your favorite of our four recipes, it’ll be time to wow mom on Mother’s Day!

 

1. Toasted Coconut Chocolate Pumpkin Spice Latte with Chocolate Drizzle

Though this recipe has a long name, the prep time is far shorter. This delicious drink will evoke everyone’s favorite pumpkin spice flavors while letting you add your own unique twist thanks to the smooth and silky coconut. 

Ingredients (serves 1 person)

  • 3/4 cup of coconut milk
  • 1 tablespoon of pumpkin puree
  • 1 teaspoon of brown sugar (you can use white sugar if you want)
  • 1/2 teaspoon of pumpkin pie spice
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of unsweetened coconut flakes
  • 3-4 tablespoons of cocoa powder 
  • 1/2 cup of strong coffee (can be made lighter based on personal preference)
  • whipped cream (for garnish)
  • chocolate chips (to taste)
  • Caramel sauce (to drizzle over the dessert)

Instructions

  1. Start by combining your coconut milk, pumpkin puree, sugar, and pumpkin spice. Use a whisk to mix the ingredients together and then place them in the microwave until the coconut milk is hot (but not boiling)
  2. Add the cocoa powder and vanilla extract to your hot coconut milk 
  3. Pour the combined mixture into a glass and add your hot coffee to it. You can also add an additional tablespoon of coconut milk for great visual flair
  4. To add a bit of extra oomph, add your chocolate chips and caramel sauce into a bowl and microwave them for a few seconds until the chocolate has melted
  5. Top off your drink with toasted coconut flakes and the caramel drizzle you just made

 

    2. Praline Latte

    If the previous recipe had ingredients that you feel are difficult to find, or you would just like something that’s even easier to make, then this is the Mother’s Day gift recipe for you! The praline latte takes less than ten minutes to make and exhibits a flavor profile that’s super unique and undeniably delicious. Truly, this is one of those drinks that looks complicated but is actually super simple to make. Perfect to wow mom on her special day!

    Ingredients (serves 1 person)

    • 1 ½ cups of coffee (can be as strong or mild as your mom likes)
    • 2 tablespoons of unsalted butter
    • ½ teaspoon of vanilla extract
    • ½ cup of milk
    • ¼ cup of brown sugar (you can use white sugar if you like)
    • Whipped cream (optional)
    • Crushed pecans (optional)

    Instructions

    1. Start off by melting the butter in a saucepan on medium heat
    2. Add in the sugar and bring the butter to a boil, stirring regularly to avoid burning the mixture
    3. Pour in the milk and bring your mixture to a simmer. Again, keep stirring often
    4. Turn off the heat and add the vanilla extract
    5. Finally, add the coffee and your praline mixture into a tall glass and top it with whipped cream and crushed pecans 

     

      3. Peanut Butter Coffee Cake with Raspberries

      This is the ultimate Mother’s Day gift if you’re looking to combine sweet and savory into a single mouth-watering dessert. If your mom has a sweet tooth, it’s time to turn the tables so that mom’s the one eagerly awaiting seconds! 

      Ingredients (1 cake)

      • 1 ¼ cup of all-purpose flour
      • 1 tablespoon of baking powder
      • ½ cup of white sugar
      • ½ cup of brown sugar
      • ¼ teaspoon of salt
      • 1 egg
      • 1/3 cup of peanut butter
      • ¼ cup of vegetable oil
      • ½ cup of whole milk
      • 1 cup of raspberries
      • 1 tablespoon of room temperature butter

      Instructions

      1. Start by preheating your oven to 350 degrees Fahrenheit and grease an 8-inch cake pan
      2. Use a whisk to combine the flour, baking powder, brown sugar, white sugar, and salt. After mixing together, remove a small bowl’s worth and set it aside for later
      3. For the larger batch of mixture, add an egg, vegetable oil, peanut butter, and milk. Mix thoroughly until everything has a smooth, silky consistency
      4. Add the raspberries to the large mixture and pour into your cake pan
      5. Use a fork to incorporate the butter into the smaller batch of mixture until the consistency resembles wet sand. Then add the small mixture to the top of the large mixture in the cake pan
      6. Bake for about 40 minutes. The cake is done when you can poke a toothpick into it and have no batter stuck to the toothpick when you pull it back out

       

      4. Cinnamon Roll Coffee Cake

      Who doesn’t love a good cinnamon roll? Not only will you be making something totally mouth-watering, but you can relive those fond memories of the past and really give your mom something to rave to her friends about. Sweet, sentimental, and scrumptious, this is a thoughtful Mother’s Day gift that’s sure to impress!

      Ingredients (1 cake)

      • 3 cups of flour
      • ¼ teaspoon of salt
      • 1 cup of white sugar
      • 1 cup of brown sugar
      • 3 cups of powdered sugar
      • 4 tablespoons of baking powder
      • 1 ½ cup of milk
      • 4 teaspoons of vanilla extract (for wet batter)
      • 1 teaspoon of vanilla extract (for glaze)
      • 1 shot of espresso
      • 2 eggs
      • ½ cup of melted, unsalted butter
      • 1 tablespoon of cinnamon
      • 2 tablespoons of water

      Instructions

      1. Preheat your oven to 350 degrees Fahrenheit 
      2. Whisk up a dry mix by using your flour, salt, white sugar, and baking powder
      3. Next, in a separate bowl, make a wet mix by combining your milk, eggs, espresso, and vanilla extract
      4. Add your wet and dry mixtures into a single batter and then pour in the melted butter. Make sure everything is thoroughly combined
      5. Use baking spray on a pan of about 9” x 13” and add the batter
      6. Mix together your brown sugar and cinnamon and use a knife to spread it over the top of your batter
      7. Bake for 30 minutes. The cake is ready when you can poke it with a toothpick and it comes out clean with no batter stuck to it
      8. Next, add your powdered sugar, 1 additional tablespoon of vanilla extract, and water together until it is thick, like treacle
      9. Pour this mixture over your cake and it will harden into a delicious glaze
